Ginger Fried Rice

GINGER FRIED RICE

1/2 cup diced yellow bell peppers
1 small onion, peeled, diced
1 medium carrot, peeled, diced
1 1/4 cups long grain rice
3 cups chicken broth
2 tbs vegetable oil
1/2 cup frozen peas, thawed
1 tbs minced gingerroot
2 cloves garlic, peeled, minced

Prepare rice according to package directions, substituting broth for water, set aside.  In skillet, cook 1 tbs oil until heated. Add eggs. Cook until eggs are set. Remove from pan, set aside. In same skillet, cook remaining oil until heated. Add carrots, onions and peppers. Cook until vegetables are tender. Stir in garlic and gingerroot. Cook 1 min.  Stir cooked rice, eggs and peas into skillet. Cook until heated through. Season with salt and pepper, if desired. Spoon mixture into serving bowl.

  2. I think ginger is a great way to add a healthy doze of antiinflammatories to one’s daily meals. Wish I could cook this as well as you can but I am going to try. In my site I talk about the values of ginger and it would be worth it.
