Cod & Ratatouille Packets

COD & RATATOUILLE PACKETS

2 tomatoes, seeded, cut into pieces
1 small zucchini, halved lengthwise, cut into half moons
1 small yellow squash, halved lengthwise, cut into half moons
1/2 of large fennel bulb, trimmed, halved, cored, thinly sliced
1/2 small onion, thinly sliced
2 garlic cloves, minced
1 tbs chopped thyme
1/4 tsp salt
3 tbs low sodium chicken broth
4 cod fish fillets
4 tsp unsalted butter

Heat oven to 450 degrees. In a bowl, stir together first 6 ingredients, 1/2 tsp thyme, 1/8 tsp salt, pepper and broth, set aside.
(2.) Lay 4 large pieces of foil each 16″ long on work surface. Place 1 1/2 heaping cups vegetable mixture on lower half of each piece. Place fish on top of  vegetables and sprinkle with remaining thyme and 1/8 tsp salt. Place 1 tbs butter on top of each fillet. Fold foil over fish and fold edges to create a sealed packet. Place packets on a rimmed baking sheet.
(3.) Bake 20 min. or until fish is cooked through and veggies are tender. Cut open packets and slide contents onto plates, serve immediately.
