SWEET ‘N’ SPICY CHICKEN
1/4 cup minced green onions
1/2 cup pineapple preserves
1 deli cooked chicken
1/2 tsp crushed red pepper flakes
1/4 cup rice wine vinegar
Heat oven to 350 degrees. In skillet, cook preserves, vinegar and pepper flakes 1 min. Remove from heat. Add green onions. Let cool 5 min. Place chicken on rack set in foil lined roasting pan.
*Brush 1/2 preserves mixture over chicken. Roast 15 min. or until heated through, brushing with remaining preserves mixture after 10 min. then serve.
